Apple Cider Vinegar ~ Halfway through the process.

A solid month in and the grey scum has formed over the top of my apple cider vinegar.  It has started smelling like vinegar now too.  At about the 2 or 3 week mark I ended up adding a little water.  My water was evaporating faster than the scum was forming.  That all seems to be taken care of now.  I should have roughly another month to go since I used pieces of apples instead of whole apples.  I guess if you use whole apples it takes about 7 months.  I’ll have to try that when I have more apples and this is less of an experiment.  For now I’ll stick with the shorter method.
